Diwali gifting is open — pure bilona ghee, sealed by hand in glass jars

Our story

It began with a jar we didn't trust.

Pavitram was not built in a factory. It was built in a kitchen, with a wooden churner and a promise never to take a shortcut.

The beginning

A jar we did not trust

For years the ghee on our own table came from a shop, and every year it tasted a little less like the ghee we grew up with. Thinner. Flatter. Somehow anonymous. We read the label one evening and realised we could not say, with any confidence, what was actually inside it.

The decision

Back to the cow

So we went back to the beginning. To desi Gir cows, grazed and grass-fed and never pushed for yield. To whole milk instead of cream. To curd set overnight in an earthen pot, and a bilona turned by hand at dawn.

The first batch

Two days, one jar

The first batch took two days and gave us a single jar. It was grainy, deep gold, and it smelled like our grandmother's kitchen. That was the whole test, and it passed. We have not made ghee any other way since.

Today

Still made at home

Pavitram is still churned in small batches, in our own kitchen. Every jar is filled by hand and sealed the day it is made. We would rather sell fewer jars than sell a faster one.

शुद्धता परमो धर्मः

The story is still short. That is rather the point.

Small batches, one kitchen, and no plans to grow out of either.
