What A2 actually means, without the marketing

A2 is a protein, not a grade. Here is the plain version, and why the breed of the cow decides it.

Almost every ghee on the shelf now says A2 somewhere on the label. Very few explain what it means.

Cow milk carries a protein called beta-casein. It comes in two common forms: A1 and A2. Which one a cow produces is decided by her genetics, which is to say by her breed. Indigenous Indian breeds such as the Gir produce the A2 form. Many high-yield crossbred cattle produce A1, or a mix of both.

That is the whole of it. A2 is not a quality rating, not a certification, and not something that can be added to milk later. It is simply which protein the cow was born to make.

We use Gir cow milk because the breed gives A2 milk naturally, and because Gir cows graze, are grass-fed and are not pushed for yield. The label follows the cow, never the other way around.
